The terroir of our vineyards is composed of light tuff, which is usually white or gray and occasionally sandy. It also contains a percentage of clay which allows to maintain the right amount of humidity necessary for the vine.
To individuate the aromas of the grapes to use for the production of our wines we periodically carry out an analysis of the terroir and of the aromatic profiles. We also put considerable attention on giving the vines adequate care, namely we use pruning systems that allow the plants to live longer. More specifically we prune on young wood, in order to maintain healty and strong vines bringing them to a happy old age by preserving the correct lymphatic flux. The method used is that of Simonit&Sirch.
The longevity of the vine is the result of precise decisions operated by the wine grower and we are convinced that it is very important to maintain the integrity and vitality of the ancient vineyards for multiple reasons; first to enhance the quality of the wines and second for the poetic panorama that they create. Furthermore maintaining the original genes will allow us to obtain a plant which will be more resistent to diseases.
In particular, for our Moscato d’Asti, in order to find the best aromas of the grapes to use to produce it, before every vintage we carry out an analysis of the aromatic profiles of the vineyards selecting grapes from the most relevant vineyards. The climate in fact affects the aromas and level of sugar in the grapes every year and thus must be monitored.
